		<description>I cannot disagree, but for me anyway, the rewards outweigh the efforts. (I recall one Christmas Eve morning having to clean the calamare at 7:00 a.m. You &lt;i&gt;really&lt;/i&gt; had to love them)

I can only guess that the milk might have enzymes that people thought would tenderize the calamare. My own Nonna didn&#039;t do that. But she had the philosophy that you should cook them for a minute or an hour...and nowhere in between.

But if you&#039;re feeling flush, you can usually get cleaned calamare at your local mega-store for about $1.00 or $2.00 more per pound than un-cleaned.

		<description>Yew!  My least favorite thing to see/do is clean the squid.  I can recall several Christmas Eves past, slimy squid parts in bowls scattered about the kitchen... but my Nonna always soaked it in milk for a long while before flouring &#039;em up.</description>
