		<description>This dish brings back so many memories. 

I can remember eating this dish on many cold, snowy days in my Grandma&#039;s kitchen. Pair with a frittata and it one of my favorite meals.

I make this meal myself and often share it with friends. 

They rave about this &quot;gourmet&quot; meal. I just smile and think how a dish called &quot;peasant food&quot; by Grandma is loved by so many self-described foodies. :)

More than the recipes on this site, I love the historic perspective behind them.

I look forward to more entries in the future.</description>

		<description>Ah, that is so beautiful. My mother used to make escarole, not with beans that I remember, though. But I love escarole and rice soup, and sometimes I add beans. I will have to try it this way, and not as soup.

And since I was the youngest, I was the designated field green picker.  To this day, I look at weeds in my backyard and think of how they&#039;d taste in a salad or pasta fagiole.</description>
